RECENT developments in local food delivery outlets in the country suggest that ?chop bars? which hitherto had been the eating places for the poor and unsophisticated have become the in-thing of the urban populace.

Previously, chop bars were usually housed in ramshackle structures; the conditions were unhygienic and the tastiness of the food could not be trusted. Today the picture is different; hygiene has improved in many ?chop bars? worth their name and many people, especially workers, flock there to have their lunch.

There are many lunchers who would not have anything else besides local cuisine such as fufu and green soup, banku and okro soup, kokonte and groundnut soup, ampesi and palaver sauce, gari and beans stew among others. This is a good sign for the culinary artists on whom depends the burden of popularising our traditional dishes.
