Ingredients
3 large sweet potatoes, cooked.
75g salted butter softened.
2 egg yolks
2 eggs + whites
Parsley
1 tsp cumin powder
½ pound minced beef
MAGGI seasoning
1 tsp black pepper
2 cups breadcrumbs
Vegetable oil
Preparatory steps
In a mixing bowl, mix minced beef, cumin, black pepper, oregano, MAGGI seasoning and set aside.
Mash the sweet potatoes, parsley, add egg yolks, butter, mix well and set aside.
Scoop a golf ball size of the mashed sweet potato mixture and use your thumb to create a dent in the middle then scoop a spoonful of the minced beef mixture to fill the centre of the mixture and mould into golf balls sizes.
Continue the process until the mixture is finished.
Add Maggi seasoning to the bread crumbs, mix and set aside. Then beat the eggs for egg wash.
Pour oil into a pan over medium heat, dip each sweet potatoes balls into the egg wash then coat with the breadcrumbs.
Gently drop each ball in the hot oil and deep fry for 5 minutes until golden brown.
Remove the fried stuffed sweet potatoes and place them on a paper towel to absorb excess oil.
Serve hot with a sauce or dip.
