Ingredients:
2 cups rice, washed
2 cups coconut milk
1 cup water
1 chopped onion
1 chopped green pepper
2 cups assorted chopped vegetables
1 MAGGI Chicken tablet ½ teaspoon curry powder 1 teaspoon thyme
2 bay leaves
Chili powder (optional)
Preparation:
Pour water, coconut milk, curry powder, thyme, bay leaves and MAGGI into a pot, and put on a medium heat. Stir and cover until boiling.
Add the rice to the boiling mixture, and reduce the heat to medium-low. Simmer until the rice has absorbed all the liquid.
In a large frying pan, stir-fry the onions, green pepper, assorted vegetables, and chili powder for 5 minutes.
Pour the rice into the frying pan and mix well with the vegetable mixture. Allow to fry for 4 minutes, and serve while piping hot!
