We all have our days. Those days where we just aren’t feeling the whole ceremony of cooking. Today’s recipe is tailor-made for that kind of days.

Gari Foto, also known as ‘Gari stir fry’ or ‘Gari Jollof’ is a quick, easy and sumptuous meal enjoyed nationwide.

Gari; a starchy carbohydrate staple food made from the tubers of the cassava plant and popular in Ghana and neighbouring countries in West Africa, is the main ingredient for this meal.

Sometimes called “students’ companion”, gari requires no additional cooking to be eaten.

Like I said earlier, it’s a quick fix day, I won’t bore you with the facts. Let’s head on straight to preparation, shall we?

You’ll need

Two cups of Gari

Warm water

Salt to taste

Palm oil/vegetable oil

Two big bulb onions, chopped

Three or two fresh ripped tomatoes, chopped

Powered hot chilli pepper to taste

Chopped carrots, green pepper, spring onions

Eggs

Salted Beef (Tollobeefi) or smoked salmon

How to prepare it

Boil eggs

Heat Palm oil in a saucepan and fry your onions and tomatoes in there. Wash and add salted beef pieces, if that is preferred.

Do not wait till onions are golden brown to add your chopped carrots and other veggies to the Palm oil and stir.

Add chilli pepper powder to taste.

Cover to simmer for a few minutes. If smoked salmon was your choice, clean and remove all bones from the fish.



Break into pieces and add to the sauce.

Add gari little by a little while stirring. Do this until all the gari is evenly distributed. Salt to taste.

Some people like their gari foto soft hence add a little warm water to moisten the gari before adding to the sauce mix.

Others just add it straightaway for that crisp feel. After a few minutes of stirring, our foto is ready to serve.

Serve with hard boiled eggs on the side.

You can choose to fry the eggs or enjoy with Fried or Grilled Chicken. Bon appetite!
