Recipe: This Ghanaian Mpotompoto will make your holiday better

Today, we have the nutritious and delicious all-time favourite... Mpoto Mpoto.

Ingredients

Cocoyam

5 dried fish (herrings)

1 large onion

2 garlic cloves

1 cup chopped ginger

4 medium tomatoes

3 red chilli peppers

Palm oil

1 MAGGI Shrimp tablet

Steps

Peel cocoyam and cut into pieces.

Wash and place into cooking pot.

In the same pot, add water, chilli, tomatoes, dried fish and MAGGI Shrimp tablet to taste.

Cover the pot and allow to boil for 10 mins.

After 4 mins of boiling remove chilli and tomatoes, and blend. Add ginger and garlic and blend thoroughly.

Pour blended paste into the cocoyam soup.

Stir and allow to cook for 15 mins.

Scoop some soup into your earthen wear pot (Asanka).

Add the boiled cocoyam and slowly mash it in the pot.

In another pot, heat palm oil with sliced onions and minced garlic to taste. Pour palm oil onto mashed cocoyam and add fish. Stir to evenly distribute palm oil.

Serve with soup on the side.
