Here’s why you don’t need a lot of spices to make your pork taste good

Pork is enjoyed by many people all over the world. While some prefer it fried, others opt for grilling, while others choose to steam it and add it to various meals.

GhanaWeb recently uncovered an alternative pork preparation method, which is baking in a traditional clay oven.

The Queen mother of Kpoiman, Naa Afrowa Beishɔɔ, who is working hard to keep this 100+-year-old business alive, revealed that pork is a meat that tastes good on its own, hence, when spiced with many things, the taste is distorted.

Speaking to Etsey Atisu on GhanaWeb TV’s People & Places, Naa Afrowa said, “pork doesn’t like spices.”

She said from the time she was born till she took over the business, she never witnessed her grandmother or mother adding any spice to the pork they prepared aside from pepper and salt.

“Every meat has its likes. When I came to meet my grandmother doing the business, she was coating the pork with just salt, tomatoes and dry pepper. We don’t add any spice because when you cook it and add spices it doesn’t give you the authentic pork taste. You’re confused because you haven’t eaten this before.

“You don’t need spices to make it tasty. When you eat it, you’ll see that without spices, it tastes great,” she said.

Naa Afrowa also noted that the food colour, some pork sellers add to the meat is unnecessary.

It is worth noting that no oil is also used in the preparation of this pork but during its baking, a lot of oil is recovered.
