Ingredients
1 pound chicken wings
1 tbsp oregano/Basil (e.g. Akokomesa)
1 small size ginger
10 shallots
5 cloves of garlic
1 cup groundnut paste
200g spinach
1 large red onion
2 medium tomatoes
3 chili
2 bay leaves
MAGGI seasoning
1 tsp black pepper corn or ½ teaspoon of ground black pepper
Preparatory steps
Blend garlic, shallot, ginger, black pepper corn or black pepper into a smooth mixture and set aside.
Wash chicken wings in a saucepan on medium heat, add blended mixture, oregano, MAGGI seasoning, stir and let simmer for 3 minutes then add 1 litre of water and let it boil for 10 minutes.
Add whole tomatoes, onion, chili and boil for 5 minutes.
Add groundnut paste and stir.
Take out the cooked tomatoes, onion, chili and blend into a smooth mixture then pour it into the soup.
Allow it to boil for 10 minutes then add washed spinach and let it wilt for a minute.
Adjust the MAGGI seasoning to your taste.
Groundnut soup is ready to be served.
